Thai Food Recipe: Tom Kha Gai (Spicy Chicken, Coconut Milk and Galangal Soup)

Ingredients

  • 2 cups Chicken breast (cut thick)
  • 2 cups stock or water
  • 9 oz. coconut milk
  • 1 can of straw mushrooms
  • 1 lemongrass (cut diagonally then crushed lightly)
  • 4 pieces galangal (thinly sliced)
  • 3-4 kaffir lime leaves (rip off the hard part)
  • 1/4 cup fresh cliantro (cut 1 inch)
  • 4 crushed small red peppers
  • 2 tbsp. fish sauce
  • 2 tbsp. sugar
  • 1/2 tsp. salt
  • 3-4 tbsp. fresh lemon juice

Method

1. Boil stock and put coconut milk. Then add baby galangal, lemongrass, kaffir lime leaves and coriander. Mix it together.

2. When the soup boiling, put chicken breast. Cook for 10 minutes. Add peppers, sugar, fish sauce and lemon juice. Use medium heat.

3. Maximize the heat. Then add straw mushrooms. Cook for 1 minute. Turn off the heat.

4. Dress with coriander.

  • 3 cups  lukewarm water
  • 1 1/2 tablespoons granulated yeast
  • 1 1/2 tablespoons kosher or other coarse salt
  • 6 1/2 cups unbleached all-purpose flour
  • Cornmeal for the pizza peel

And then, you know the drill.  Mix with a spoon in a food-safe bucket, let it rise at room temperature for 2 to 5 hours, then into the fridge for two weeks.  Tear off chunks, shape, rest, and bake as needed.  And you all know you can decrease the yeast (http://www.artisanbreadinfive.com/?p=85) and the salt if you like it.

  • 1 lb ground turkey
  • 1/2 cup of grapeseed oil
  • 1 teaspoon salt
  • 2 teaspoons sage
  • 1 teaspoon fennel seed
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon allspice

  • 6 eggs, room temperature
  • 1 cup milk, room temperature
  • 1 cup sifted bread flour or all-purpose flour*
  • 1/4 teaspoon pure vanilla extract
  • 5 tablespoons butter

Pre-heat oven to 450F with cast iron pan. Mix all ingredients in blender. Melt Butter. take the pan out of the oven pour the butter into the pan then pour blended batter in the pan. Place the pan in the oven and bake for 20-25 minutes.
